Filter Cone: Lessons in Coffee

Filter cone/V60 Sudi’s favourite method to make her perfect brew is with a filter cone/V60. While it takes a little bit of patience, it is well worth the wait. It creates a light bodied coffee, allowing delicate notes and more flavours to come through.

Sudi's method:

  • Sudi likes to use 20g of coffee (fine/medium grind), 330ml of 93-96°C water, with 2-3min brew time.
  • Fold the edge borders of the filter paper.
  • Place the filter into the cone and place on the brew jug or cup.
  • Rinse the filter paper with hot water, this will remove the paper taste and preheat the vessel or cup.
  • Discard the water
  • Add 20g of fresh ground coffee and shake gently to level it out If you are using scales, place the vessel or cup on the scales and tare.
  • Start the timer.
  • Pour 40-60g of 93-96°C water to saturate the whole bed evenly and let it bloom for 30 seconds.
  • Start adding the remaining water in a slow manner in a spiral pattern (2-3 min total brew time) You can add some extra agitation by gently stirring with a spoon.
  • Swirl, pour and enjoy!
